Super Bowl of Guacamole

Here is a simple and delicious guacamole recipe that we’ve been enjoying for years. It’s so quick, easy to make, and sure to wow! It’s a crowd pleaser.

Ingredients:

2 avocados

1/3 cup of tomatoes, diced

1/3 cup sweet corn

1/8 cup red onion, diced

1/4 cup cilantro, chopped finely

2 tsp. lemon juice or 2 tsp. lime juice, we like to change it up a bit sometimes.

1/4 tsp. pepper

1/4 tsp. salt

Feel free to add more of any ingredient you favor, and to adjust the salt and pepper.

Method of Prep:

Cut each of the avocados in half, exposing the center pit.  Remove the seed by slipping a spoon between the seed and fruit. Gently work the seed out of the fruit. /the skin or peel is easy to remove from a ripe avocado. Grasp the outer skin and pull it away from the green flesh of the fruit.

In a bowl simply smash the avocados with a fork. You can mash it up to the texture you prefer, either creamier or chunkier tastes just great.

Next add in the lemon or lime juice and salt & pepper. Mix thoroughly.

Lastly add in the chopped ingredients of tomatoes, onion, cilantro and corn. Gently fold into the avocado.

Guacamole is best served soon after making as to avoid browning of the fruit. The lemon or lime juice helps to prevent this.

Serve with tortilla chips and enjoy! This versatile guacamole recipe also works great in burritos or sandwiches!

Serves 2-3. Double recipe for a larger crowd.
