Roasted Garlic Mashed Potatoes

Who doesn’t love mashed potatoes?! We certainly do and would love to share with you one of our favorite ways to make them. There are so many types of potato, and each one brings it’s own flare to a good mash. We like the buttery flavor of the Yukon gold potatoes. And the rich flavor that only roasted garlic can provide. My mouth is watering just typing about this.



4 large Yukon gold potatoes

1 whole garlic bulb

olive oil, a drizzle, about 1 tsp.

1 1/2 tsp. rosemary, dried/crushed small or fresh (optional)

2 Tbsp. vegan butter

1/3 cup almond milk or another kind of non-dairy milk

2 tsp. salt

Method of Prep:

Preheat the oven to 400°F/204°C.

First, prepare the bulb of garlic for roasting in the oven. Remove the outer layer of garlic skin, leaving the layers closest to the cloves of garlic. Cut off the tip side of the garlic exposing the bottoms of the cloves. Make a pocket of aluminum foil, place the garlic bulb inside and drizzle/coat with olive oil. Wrap up the foil tightly. Place in the oven, either directly on the rack, or on a sheet pan.


Roast the garlic on 400°F/204°C for 30-35 minutes. When it is done roasting allow the garlic to cool for several minutes. Next remove all the cloves by gently popping them out of the soft skin, or using a small paring knife to help you remove each clove. This can be done in advance of preparing the potatoes, or at the same time.

Wash, peel and chop your potatoes into 1-2″ cubes. Place in a large pot and cover the potatoes with cool water, about an inch over top of them, and 1 tsp. of salt. Bring to a boil on Hi. Once the pot is boiling reduce the heat to Med/Hi and allow to boil uncovered for 18-20 minutes. Test a potato by sticking a fork into it, which should slide in easily. Drain the potatoes.


In a Medium mixing bowl add your cooked potatoes, vegan butter, rosemary, almond milk, garlic and 1 tsp. of salt. Either using a hand mixer or a potato mashing tool, blend all ingredients together until creamy or slightly chunky depending on how you like your mashed potatoes.

Serves 2-3 generous portions.
