Chocolate Chip Banana Nut Bread

You’ll go bananas over this yummy bread! It’s delicious for breakfast or dessert. This is a quick and easy recipe to whip up when you notice your bunch of bananas are starting to get over-ripe.

Ingredients:

4 over-ripe bananas

1/3 cup melted vegan buttery sticks or spread

1 cup vegan sugar

1 1/2 cups all-purpose flour

1 1/2 tsp. Ener-G egg replacer mixed with 2 Tbsp. warm water or 1 tbsp ground Flax seeds mixed with 3 Tbsp. warm water, both are equal to one egg

1 tsp. baking soda

1 tsp. vanilla

pinch of salt

1/4 cup chopped walnuts

1/4 cup mini vegan chocolate chips

Method of Prep:

Preheat oven to 350°F.

Peel the bananas.

In a medium sized bowl, smash the bananas until very creamy, leaving few lumps.

Mix in melted vegan butter.

Mix in sugar, vanilla, and egg replacer.

Fold in the dry ingredients, flour, baking soda, and salt. Just until incorporated.

Loosely fold in the chopped walnuts and mini chips.

Grease  9 x 5 loaf pan. Pour finished mixture into pan and smooth out the top so it is spread evenly.

Bake in the oven at 350°F for 50-60 minutes. Test with a toothpick, which should come out clean.

Allow bread to cool in the pan before turning out. Yield: 1 loaf.

To store, wrap the bread in aluminum foil or Ziploc bag, leave at room temperature.
