This baked apple crumble is a gooey, caramely, oaty cup of yum! There was no talking between Mike and I while we devoured this dessert, just lip smacking. These apple crumbles pair very well with vegan vanilla ice cream. Happy eating!
For apple filling:
2 pink lady or granny smith apples, these work best as they are tart apples
1/4 cup vegan sugar
1 1/2 tsp. all-purpose flour
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup walnuts, largely chopped
For crumb topping:
1/2 cup brown sugar, packed and finely ground
2 tsp. all-purpose flour
2 Tbsp. vegan buttery sticks or spread
2 Tbsp. old fashioned oats
1/2 tsp. vanilla
1 Tbsp. walnuts, finely ground
Vegan powdered sugar for garnish.
This recipe makes 2- 3″ tall baking ramekins.
Method of Prep:
Preheat the oven to 350°F.
Prepare the filling and topping in two separate bowls. In the first bowl, combine the 1/4 cup sugar, nutmeg, cinnamon, and 1 1/2 tsp. all-purpose flour.
Peel and cut the apples into 1″ pieces. Add to the first bowl. Coat the apples evenly in the mixture. Add in the largely chopped walnuts.
In the second bowl, combine the 1/2 cup brown sugar, 2 Tbsp. old fashioned oats, 2 tsp. all-purpose flour, finely ground walnuts and vanilla. Break up the 2 Tbsp. vegan butter and combine with dry ingredients until moist.
Next add about 1/4 of the crumb mixture to the apples for extra caramely, oaty goodness!
Place apples in each baking ramekin. Cover with the rest of the crumb topping.
Line a baking sheet with aluminum foil or parchment paper. Place ramekins on the sheet and bake in the 350°F oven for 22-25 minutes, if the crumble is browning, cover the tops of the ramekins with parchment or aluminum foil after 15 minutes of baking. You will notice the apple juices starting to bubble.
Allow to cool for five minutes. Sprinkle vegan powdered sugar on top.
