Baked Apple Crumble

This baked apple crumble is a gooey, caramely, oaty cup of yum! There was no talking between Mike and I while we devoured this dessert, just lip smacking. These apple crumbles pair very well with vegan vanilla ice cream. Happy eating!

Ingredients:

For apple filling:
2 pink lady or granny smith apples, these work best as they are tart apples

1/4 cup vegan sugar

1 1/2 tsp. all-purpose flour

1 tsp. cinnamon

1/4 tsp. nutmeg

1/4 cup walnuts, largely chopped

For crumb topping:
1/2 cup brown sugar, packed and finely ground

2 tsp. all-purpose flour

2 Tbsp. vegan buttery sticks or spread

2 Tbsp. old fashioned oats

1/2 tsp. vanilla

1 Tbsp. walnuts, finely ground

Vegan powdered sugar for garnish.

This recipe makes 2- 3″ tall baking ramekins.

Method of Prep:

Preheat the oven to 350°F.

Prepare the filling and topping in two separate bowls. In the first bowl, combine the 1/4 cup sugar, nutmeg, cinnamon, and 1 1/2 tsp. all-purpose flour.

Peel and cut the apples into 1″ pieces. Add to the first bowl. Coat the apples evenly in the mixture. Add in the largely chopped walnuts.

Line a baking sheet with aluminum foil or parchment paper. Place ramekins on the sheet and bake in the 350°F oven for 22-25 minutes, if the crumble is browning, cover the tops of the ramekins with parchment or aluminum foil after 15 minutes of baking. You will notice the apple juices starting to bubble.

Allow to cool for five minutes. Sprinkle vegan powdered sugar on top.

My wife is a dessert aficionado. I made this recipe for her and she absolutely loved it. Unlike my wife, I prefer more crumble in my crumble and cobblers than is usual, so will double the crumb topping next batch. We were naughty and substituted some non-dairy ice cream for the powdered sugar and made this ala mode – it was sinfully delicious!!!!
We love berries and my wife wondered about a berry version of this – why not???? I’m going to adapt this to blackberries – with ala mode topping of course!!!

So glad you enjoyed it. I was thinking of adding blueberries the next time I make it. Blackberries sound amazing too!!
