Vegan Irish Potato Candies

Irish potato candies are a traditional Philadelphia confection that, despite it’s name, is not from Ireland. This Irish-American treat is mostly available around St. Patrick’s Day. We like to share with our friends and family. We don’t mind splurging once in a while for a sweet treat.

Ingredients:

4 oz. vegan cream cheese, we like Tofutti brand

4 Tbsp. vegan butter

1 1/2 tsp. vanilla

2 3/4 cup unsweetened, shredded coconut

4 cups vegan powdered sugar

1/2 tsp. nutmeg

1 Tbsp. cinnamon

1 Tbsp. cocoa powder

Method of Prep:

In a medium sized bowl, cream together the vegan cream cheese, vegan butter and vanilla with a hand mixer until homogeneous.

Add in the shredded coconut, and half the powdered sugar, blend with the hand mixer. Add the other half of the powdered sugar and mix again until blended.

On a baking sheet or cutting board lined with parchment, roll the mixture into little potatoes, don’t strive for perfection as dimples and imperfections make them look more like actual potatoes. About a two bite portion is the size you are looking for.

Place the potatoes in the fridge for about five minutes to get a slight chill to them.

In a bowl, combine the cocoa powder, cinnamon and nutmeg.

Roll each potato in the coating mixture. The coating can be thinner in some areas on each potato, to give them that real potato look.

This recipe yields approximately 48 little potatoes. Enough to hand out to your friends and family.

Store them in a container in the fridge.
