Oatmeal Cookie Date Bites

We for one, love dates. These date bites taste like yummy oatmeal cookies without the added sugar. We have a feeling your kids will love them too! For a simple, nutritious pick-me-up, these are perfect to grab on the go! Just the energy boost you need!

Ingredients:

1/2 cup pitted dates

1/4 cup raisins

1/4 cup oats, old fashioned

1/4 cup unsweetened, shredded coconut

1 Tbsp. coconut oil

1/2 tsp. cinnamon

1/4 tsp. nutmeg

1/2 tsp. vanilla

1/4 tsp. salt

1 tsp. oats and 1 tsp. coconut mixed, for rolling

Method of Prep:

In a food processor, chop up the dates into a finer, sticky consistency.

Add the vanilla, salt, coconut oil, coconut, cinnamon and nutmeg to the dates and blend until mixed well.

Lastly add in the oats and raisins. Pulse the food processor just until incorporated and the raisins are just chopped.

Remove from the food processor and roll into ping-pong sized balls.

In a bowl, combine the 1 tsp. oats and 1 tsp. coconut for rolling. Coat the outside of each ball with this mixture.

This recipe yields 6 balls. Double for a dozen.

Store in a container in the fridge. Serve chilled.
