Falafel-style Sliders

These tasty little falafel-style chickpea sliders are the bees knees! The great thing about these is the chickpea batter can be made in advance and kept in the fridge for whenever you want a snack. A perfect appetizer for parties too. These are topped with our Roasted Red Pepper Hummus.

1- 15oz. can of chickpeas

2 tsp. salt

1/2 of a yellow or white onion, quartered

3 garlic cloves

1 Tbsp. olive oil, plus 4-5 Tbsp. olive oil for frying

3 Tbsp. lemon juice

1 tsp. cumin

1 tsp. coriander

1/4 tsp. cayenne pepper

1/3 cup bread crumbs, we used Italian bread crumbs which have a few seasonings

1/2 cup all-purpose flour

1/2 cup parsley

Cucumbers for garnish

Your favorite slider buns

Method of Prep:

In a food processor, add the onion, garlic, salt. Blend until onions are chopped fine.

Add in the cumin, coriander, cayenne pepper, lemon juice and olive oil. Blend til incorporated. Scrape down the bowl.

Add in the chickpeas, flour and bread crumbs. Blend til incorporated well. A few lumpy chickpeas is ok.

Lastly add in the parsley and pulse until incorporated.

The mixture is ready. It will be very sticky. You can either use it immediately, or refrigerate for at least one hour. After refrigeration, form the mixture into small slider sized patties.

Preheat a pan with 4-5 Tbsp. olive oil on Med/Hi heat.

If making the sliders immediately, drop small spoonfuls onto the heated pan with oil, allow a skin to form on one side, then flip it and press down with your spatula to flatten into a round slider. Or place your formed patties onto the heated oiled pan.

Cook in the oil until crispy and golden brown.

Serve hot on your favorite slider bun with our Roasted Red Pepper Hummus and sliced cucumbers.

This recipe makes about 10-12 slider sized patties.

Photo-bomb! Our dog Roc is eyeing these tasty sliders! Too bad he can’t have onions!

Serve hot, enjoy!

Made these directly after making the wonderful roasted red pepper hummus. The combination is truly delicious. I added daikon slices to one slider and cucumber to the other. The daikon adds a wonderful extra spiciness. Next time I would cut back on the salt, and perhaps the garlic and lemon. I used whole wheat flour with good results. My husband thought this worthy of a five star rating! I agree.
