This is our follow up to our now famous Toasty Oven Chickpeas. With Cinco de Mayo around the corner we would love to introduce to you our new Chili Lime Toasty Oven Chickpeas, they are still extremely easy, packed with protein, a great snack for on the go and absolutely delicious!
1 15oz. can chickpeas, drained, rinsed and dried
1 Tbsp. olive oil
juice of 1/2 a lime
zest of 1 lime
1 tsp. chili powder
1/8 tsp. cayenne pepper
1 tsp. white pepper
salt to taste
Method of Prep:
Pre-heat oven to 400°.
In medium sized bowl, toss the dry Chickpeas in the olive oil and lime juice/zest.
Add spices/salt and coat Chickpeas thoroughly.
Spread out on a parchment lined sheet pan.
Place in the oven for about 35-40 mins. (Ovens do vary, so keep a close watch as they may need less time. Stir around the chickpeas every so often to ensure proper browning.
Remove from the oven and let cool entirely before eating.
Serves 1-2. Follow the same directions when doubling the batch.
