Heirloom Tomato Sandwich

We love heirloom tomatoes and we get so excited when we start to see them at our local markets. Some markets will label them as “Ugly” tomatoes but we find them to be gorgeous. There are many varieties of heirloom tomatoes and for this sandwich we chose a local favorite, “The Brandywine” but you can use whatever ones are from your own area. This is Michael’s favorite summer sandwich and it’s bursting with the flavor of summer.

Ingredients:

1 large “Ugly” Heirloom tomato

10 basil leaves

2 Tbsp. Extra Virgin Olive Oil

1 Tbsp. balsamic vinegar

Cracked black pepper

baguette loaf of bread

Method of Prep:

Slice the baguette in half. Cut along the side to open for the sandwich.

Brush the inside of the bread with the Extra Virgin Olive Oil. Crack pepper generously over the bread.

Place the basil slices on the bottom side of the bread.

Slice the Heirloom tomato into 4-6 thick slices. Toss in a bowl with the balsamic vinegar.

Lay the tomato slices on top of the basil.

Now you have one tasty, simple sandwich!!

    Wow, that looks so good – I’m drooling over here. …I am heading to lunch in 20 minutes so that may have something to do with it. But now I wish we were going to a sandwich place!

    Yum! You are combining a childhood favorite of mine – the tomato sandwich – with a more recently found love – the heirloom tomato!
