Sunshine Golden Beets

Summer is upon us! The sun is shining and golden beets are in season. This recipe takes the delicious golden beet, and pairs it with fresh squeezed orange juice and all spice for a burst of summer! One great thing about cooking with golden beets, besides the health benefits, is that they are way less messy than red beets. In fact they aren’t messy at all. With a sweet, delicious flavor, this makes a wonderful side dish for any meal.

3 large golden beets

1/4 cup olive oil

1/2 an onion, quartered

1 Tbsp. rosemary

1 tsp all spice

salt & pepper, to taste

Juice of 1 orange, or 1/3 cup orange juice OLYMPUS DIGITAL CAMERA Method of Prep: Blanche the beets in boiling water for about 30 minutes. They will be slightly tender. Remove from the hot water and place in cold water until the beets are cooled. Remove the beet skin, it will come right off! OLYMPUS DIGITAL CAMERAOLYMPUS DIGITAL CAMERA Preheat the oven to 425°F. Cube the beets into about 1″-1 1/2″ cubes. Add to a clean bowl. In the bowl, add in the olive oil, onion, rosemary, all spice and salt & pepper to taste. Toss the beets until they are well coated.
