We put off buying a wok for the longest time, but when we finally did it opened up a whole new world of cooking. It is now one of our essential kitchen tools. Since going vegan, we’ve been making stir fry’s at home. We used to buy bottles of sauces such as hoisin to add until we made our own one day and realized just how easy it was. This stir fry with crispy tofu and crunchy veggies is fast and oh so delicious. Grab your chopsticks and enjoy!
1 14oz. package firm tofu, we used organic, drained
2 cups broccoli
1/2 a sweet onion
1 cup spinach leaves
1 cup snow peas
3/4 cup yellow pepper, in strips
3/4 cup orange or red pepper, in strips
1/2 cup cashew pieces
3 cloves garlic, coarsely chopped
4 Tbsp. grapeseed oil (separated into 2- 2 Tbsp.amounts)
1 Tbsp. sesame seeds, for sprinkling on top
2 tsp. sesame oil
2 tsp. rice vinegar
1 Tbsp. molasses
4 Tbsp. soy sauce
2 Tbsp. peanut butter
2 tsp. red chili paste
1 tsp. Sriracha
1 Tbsp. miso paste (optional)
2 cloves garlic, minced
1/8 tsp. onion powder
1/8 tsp. black pepper
Suggestion: Serve over sticky rice
Method of Prep:
Hoisin Sauce: Whisk all ingredients together in a bowl until well combined. Set aside.
After draining the tofu and removing the excess water, cut the tofu into cubes. We got 40 cubes out of our block of tofu. But, you can cut them any way you wish.
Heat 2 Tbsp. of grapeseed oil on a flat pan over Med/High heat. Pan fry the tofu cubes until browned. Set aside on a paper towel to absorb any excess oil. If you have oil left over from the tofu, pour it into your wok for the stirfry.
Heat the other 2 Tbsp. of grapeseed oil in the wok over High heat. Once the oil starts to get smoky, add in the garlic and onions, stirring frequently to prevent burning. They will become clear and reduce.
Next add in all the other veggies. Toss them around frequently in the wok. The spinach will reduce and all the veggies will start to brown a little, and cook.
While still stirring frequently, add in the hoisin sauce and cashews. Toss all the veggies in the sauce.
Lastly, add in the tofu and toss in the sauce. Only cook for about 2 more minutes. Remove from the heat.
The cook time from the garlic and onions to the tofu is about 10 minutes total.
Serve over rice.
The recipes serves 3-4 people.
