Almond Avocado Chocolate Mousse

You might not think of avocados when you think of chocolate mousse, but trust us when we tell you that this combination is absolutely decadent! It’s also decadent. Did we mention decadent? But seriously, this mousse is healthier and so easy to make. The chopped almonds on top gives you a pleasant crunch in this silky mousse. We are sure that all of you chocoholics will enjoy this soy-free, gluten-free, dairy-free, egg-free and guilt-free dessert, so grab a spoon and dig in!

Ingredients:

3 large, ripe avocados

1/4 cup agave nectar, we used organic, light

3 oz. dark chocolate bar, or 3 oz. of dark chocolate chips, melted and vegan of course!

1/4 cup cocoa powder

3 Tbsp. coconut oil

2 tsp. vanilla extract

pinch of salt

2-3 Tbsp. of almonds, chopped finely for garnish

Method of Prep:

Melt the dark chocolate bar, or dark chocolate chips over a double boiler or just use a pot and a metal bowl.

Peel and remove the pits from the avocados.

Blend all ingredients together until completely smooth with a hand mixer or a high speed blender, scraping down occasionally.

This mousse is very versatile and can be served right away, or you can chill it in the fridge for about an hour!

This recipe serves 2-3. Probably more like 2 servings, because once you start eating this, it’s hard to stop.
