This is the perfect summer meal that will give you the energy to keep you going and the taste to have you coming back for more! A true summer romance!
1 cup uncooked white quinoa, yields 2 cups when cooked
1 cup tomato, diced
1 cup cucumber, diced
1/4 cup red onion, diced small
1 large avocado, largely chopped
3 cups lettuce, we used mixed field greens and spinach
1 cup mango
1/8 cup raw cashews
1/2 tsp. fresh ginger
1 Tbsp. scallions
1/2 cup water
Method of Prep:
In a high speed blender or food processor, combine all the dressing ingredients. Blend until smooth. Refrigerate dressing until ready to use.
Cook the quinoa. While the quinoa is cooking, prepare all the veggies. Toss the tomatoes, cucumber and red onions together.
This recipe makes 2 large servings. In two large salad bowls, place one cup of the cooked quinoa in the bottom of each bowl. Layer the tomato, cucumber and red onions on top of the quinoa. Next add on the lettuces and lastly the avocado.
Generously drizzle the mango dressing onto each quinoa bowl.
Serve immediately. The quinoa will still be hot.
