Mumbai Street Wrap

We love Indian food, we can’t get enough of the rich spices and flavors.
When we came up with this portable Indian delight we imagined ourselves dancing and singing in a classic Bollywood style to the world on how delicious these are.
This makes a fantastic lunch, the TVP is packed with so much protein that you’ll have the energy not only to finish the work day but to do it while singing and dancing enthusiastically like all your favorite Bollywood stars. We named this street wrap after India’s capital city of Mumbai (previously known as Bombay) which is the home of the Bollywood film industry.

Ingredients:

1 cup textured vegetable protein (TVP)

1 1/4 cup vegetable stock

1/2 cup frozen sweet peas

1 tsp. cumin

1/2 tsp. turmeric

1/2 tsp. coriander

1 Tbsp. curry powder, we used mild

1/2 tsp. ginger

1 garlic clove, sliced thinly and chopped

1 roma tomato, or 5-6 cherry tomatoes (whatever you have on hand)

salt to taste

1/2 tsp. olive oil

wraps, we picked vegan whole wheat wraps

Method of Prep:

In a deep saute pan, heat 1/2 a tsp. olive oil, just to coat the pan, over Med heat.

Saute the garlic and tomatoes, until soft and the tomatoes have reduced.

Increase the heat to Med/Hi and add in the vegetable stock to deglaze the pan. Bring to a rapid boil.

After boiling, add in the frozen peas, and return to a boil again.

Add in all the spices and stir until blended well.

Lastly, add in the TVP and stir until well coated and the liquid has been absorbed. Remove from the heat. Allow to sit for 10 minutes.

Place the TVP mixture in the middle of your wrap, and roll up, burrito style.

This recipe makes 4-6 small wraps. Tastes great with a side of poppadums.

Serve Hot, Enjoy! Also tastes great cold from the fridge in a wrap!
