As it’s starting to become chilly out and all the leaves are falling and changing colors we are reminded that Autumn is one of our favorite seasons for wholesome comfort dishes. Sweet potatoes are such a tasty way to enjoy the flavors of Autumn. This side dish is simply delicious and easy to prepare. We have discovered that the citrus flavors really enhances the sweet potato’s taste and the trio of fall seasonings (cinnamon, nutmeg and allspice) can do no wrong. Sweet potatoes are one of the healthiest foods you can eat. They are a great source of vitamins C, B6, D, iron, magnesium, potassium and they are high in carotenoids (A colorful plant pigment that the body can turn into vitamin A and are powerful antioxidants that can help prevent some forms of cancer and heart disease and boost your immune system to fight off infections).
3 large sweet potatoes (roughly 3 lbs. total)
1/2 cup vegan butter
Zest and Juice of 1 orange
1 tsp. lemon juice
1/2 cup light brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice
Method of Prep:
Wash and peel the sweet potatoes. Cut into 1/2 inch pieces.
Bring a pot of water to boil and boil the cut sweet potatoes for about 25 minutes, or until fork tender. Drain and set aside.
In a small pot, melt the vegan butter over Med/High heat. Once melted, add in the light brown sugar, cinnamon, nutmeg and allspice. Mix well. Once combined, add in the orange juice, lemon juice and orange zest. Mix well and remove from heat.
Mash the sweet potatoes in a bowl, either with a hand mixer, or masher. Once mashed, add in the sugar/spice mixture and blend well.
