This colorful, simple and absolutely delicious side dish will surely brighten up your holiday dinner table. The flavors really compliment each other from the creamy Butternut Squash to the sweet cranberries and the rich savory kale. This is a traditional holiday dish for our family and we hope it finds it’s way to your family’s table too.

1 butternut squash
1 bunch of kale, rinsed in water and the stems removed
1/2 cup dried cranberries
1/2 cup fresh parsley
2 Tbsp. olive oil (Divided)
salt & pepper, to taste
Method of Prep:
Preheat the oven to 400°F.
Peel the butternut squash and cut into bite sized cubes. Toss the squash with 1 Tbsp. olive oil and salt & pepper to taste.
Layer the squash in a large baking pan, lined with tin foil. Roast in the oven uncovered for 15 minutes.
While the squash is roasting, prepare the kale. In a pan on Med/High heat, lightly saute the kale for a few minutes in 1 Tbsp. of olive oil and salt & pepper to taste. This is to reduce the size of the kale.
When the squash is finished roasting the 15 minutes, toss the parsley and dried cranberries in with the squash. Then layer the sauteed kale on top. Cover the entire pan with tin foil and return it to the oven for an additional 20 minutes of roasting.
This is the best side dish for the holidays!!
