There isn’t a more heart warming aroma than the smell of fresh baked chocolate chip cookies in your home. These old-fashioned Vegan Chocolate Chip Cookies will bring you back to your childhood with one bite. Perfectly crispy around the outside edge, while warm and gooey in the middle. These will blow your friends and family away when they find out they are vegan, because not only are they a delicious vegan cookie, they are a delicious cookie, period.
1 cup light brown sugar, vegan
1/2 cup sugar, vegan
2 tsp. vanilla extract
1 cup coconut oil, room temperature
1 banana, smashed well (these have a slight banana taste, so if you don’t like banana try applesauce instead)
2 1/4 cups all-purpose flour
3/4 tsp. baking soda
1 tsp. salt
2 cups chocolate chips, vegan
Method of Prep:
Preheat the oven to 350°F.
Using a stand mixer, or hand mixer on medium speed, blend together the sugar, light brown sugar, vanilla extract and coconut oil until light and fluffy.
Scrape down the bowl, and add in the smashed banana next. Mix until incorporated.
Next, add in the dry ingredients and mix on low speed until incorporated.
Scrape down the bowl, and lastly add in the chocolate chips. Only mix until combined.
Using a cookie scoop, or spoon, scoop the cookies onto a parchment lined baking sheet. Space them out about 2 inches apart. Using the palm of your hand, flatten the cookie dough.
Bake in the oven for 8-10 minutes or until golden brown. Remove the cookies from the baking sheet for cooling.
Serve with your favorite ice cold glass of non-dairy milk.
