Oven Baked Cinnamon Apples

This recipe is so easy, it’s what we like to refer to as a non-recipe. A delicious snack, side dish or dessert, these cinnamon apples are sweet, nutty and will be sure to warm your belly.

Ingredients:

4 large apples, we chose Pink Lady apples. Honeycrisp or Granny Smith apples will work also, knowing that the Granny Smith will be more tart.

1/2 cup sugar, vegan

1/3 cup dried cranberries

1/3 cup walnuts

1 Tbsp. all-purpose flour (for a gluten-free option, use a gluten free flour or omit the flour. The flour in this case helps the spices stick to the apples)

2 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. cloves

Method of Prep:

Preheat the oven to 375°F.

Peel and core the apples, cutting each into 8 slices. We used a corer/cutter for easy slicing.

In a bowl, toss the apples in the vegan sugar, dried cranberries, walnuts, cinnamon, nutmeg, cloves and all-purpose flour. Coat the apples well.

Place apple mixture into a non-stick shallow baking pan or ceramic casserole dish. Place foil over top.

Bake in the oven for about 45 minutes, or until apples are soft, stirring every 15 minutes to ensure the apples are baked and coated evenly.

Remove from the oven, and let stand ten minutes before serving.
