Double Chocolate Pecan Cookies

C is for cookie and these cookies are for you! A rich, dark chocolate cookie packed with chocolate chips and pecans will satisfy any chocoholic or cookie monster. So grab a nice cold glass of almond milk and enjoy!

Ingredients:

1 1/2 cups vegan sugar

3/4 cup coconut oil

2 tsp. vanilla extract

1/2 cup applesauce

1 3/4 cups all-purpose flour

1 cup cocoa powder

1 tsp. salt

1 tsp. baking soda

3/4 cup pecans, chopped small

3/4 cup vegan chocolate chips

 

Method of Prep:

Preheat the oven to 350°F

We used a stand mixer for this recipe. In the mixing bowl, blend together the vegan sugar, coconut oil and vanilla extract until they are light and fluffy.

Add in the applesauce and mix just until blended.

Next add in all the dry ingredients including the all-purpose flour, cocoa powder, salt and baking soda. Blend on the mixer until combined.

Lastly add in the chopped pecans and vegan chocolate chips, blend until just incorporated. The cookie dough may see crumbly, but this is ok.

Line a cookie sheet with parchment, and scoop rounded balls of cookie dough into lines, leaving one inch between cookies.

After the tray is full, using the palm of your hand, flatten the cookies somewhere between a 1/4″ to a 1/2″.

Place in the oven, and bake for 8-10 minutes.
