Raw Massaged Kale Salad

Kale is so wonderful, it’s considered one of the world’s healthiest foods, plus it can be very tasty!
This simple Raw Massaged Kale Salad is a fantastic way to enjoy kale in it’s purest form with minimal preparation.
The mixture of red and green kale with crunchy walnuts, tangy dried cherries, thin sliced red onions and fresh squeezed Meyer lemon juice will not only satisfy your taste buds but it will give you the energy and power to perform at the top of your game!

1/2 bunch red kale, wash and remove the stems

1/2 bunch green kale, wash and remove the stems

2 Tbsp. olive oil

1/2 a Meyer lemon, juiced

sea salt, to taste

fresh ground pepper, to taste

red onion, sliced thin

walnuts, chopped

dried cherries

As this is just the basic kale salad, feel free to add some grilled tofu or tempeh for some added protein.

Method of Prep:

In a large salad bowl, begin to massage the two kind of kale together with the olive oil, lemon juice, sea salt and fresh ground pepper. Vigorously massage until the volume of the kale is reduced and the greens are tender, about one minute.


Add your toppings to the top of the salad.


This recipe serves about 4 people.

Serve cold, Enjoy!
