This dish such a wonderful way to enjoy cauliflower. Growing up in an Italian home pasta was always a staple and fettuccine Alfredo was a favorite. But it still can be with this delicious, rich, creamy and guilt-free cauliflower Alfredo sauce. If you are sensitive to gluten you can easily replace the pasta for gluten-free fettuccine.
1 large head of cauliflower
1/2 lemon, juiced
2-3 garlic cloves
1 tsp oregano, dried
1 Tbsp nutritional yeast
1-2 tsp salt
pepper to taste
1 box of cooked fettuccine
a generous hand full of fresh spinach
Method of Prep:
Cut the cauliflower into smaller pieces. Boil a pot of water and cook the cauliflower until tender, about 4-6 minutes.
In a high speed blender (we used our Vitamix) blend together the cooked cauliflower, lemon juice, garlic cloves, oregano, nutritional yeast, salt and pepper.
Cook the fettuccine per instructions.
After the fettuccine is drained, return it to the pot, and pour the cauliflower alfredo sauce over top.
Add in the fresh spinach and coat the fettuccine and spinach generously in the sauce.
Serve hot, Enjoy!
