Grilled Yamwich

This has to be one of the most satisfyingly delicious sandwiches on the planet! The sweetness of the yams is complimented by the savory onions and garlic. The tangy creamy dressing and sauteed kale add so much flavor to this sandwich. This is such a tasty way to enjoy these healthy vegetables plus it’s so easy to prepare.

Ingredients:

1 bunch of kale (stems removed)

1 large yam (peeled and cut into 1/2 inch slices long way)

4-6 small cloves of garlic (crushed)

1 Vidalia onion (sliced)

salt/pepper to taste

olive oil for pan

2 small baguettes or one large one cut in two

 

Sauce ingredients:

1/4 cup vegan mayo

1 Tbsp spicy German mustard

fresh ground pepper

2 drops of liquid smoke

Method of Prep:

Mix all sauce ingredients together until smooth, set to the side.

Saute the kale over Med heat with a little olive oil, salt and pepper. Saute until tender, about 5 minutes. Set aside until you assemble the yamwich.

Bring a pot of water to a boil. Drop in the sliced yams, and boil for 5 minutes. Remove them from the water and set aside.

On a grill pan, over Med heat, begin to grill the crushed garlic and onions. Then place the boiled, sliced yams onto the grill pan. Grill for about 15 minutes or until they are tender with grill marks, be sure to flip them half way through cooking.

On the sliced baguette, layer the kale on the bottom, place the grilled yams on top, and then top off with the garlic and onions. Lastly, spread the sauce on the top roll.

This recipe makes two sandwiches.
