Garlic & Herb Chickpea Salad

Here is a delicious protein packed dish that will give you energy and have you smacking your lips!
This is a wonderfully easy dish to prepare and you can store it in your fridge for a few days. It’s great for picnics, potlucks, as a side dish and anytime you have a craving for Mediterranean food.




2- 15oz cans of chickpeas, rinsed and drained

2-3 large garlic cloves, minced fine

1/3 cup fresh parsley, chopped fine

1/3 cup red onion, chopped fine

10 large basil leaves, chopped fine

3 Tbsp. olive oil

salt & pepper



Method of Prep:

After all the herbs and garlic are minced and chopped, mix all ingredients together in a bowl.

Chilling this dish over night allows the flavors to marinate. But if you are in a hurry, chill for at least 1 hour.


Serve chilled, Enjoy!
